I love amazing food. I've been a vegetarian for most of my life, but have relaxed on it a bit over the last few years. I'm strict about only using high quality ingredients in the food I cook for myself and others. I love to support local businesses and produce, as long as the product quality warrants it.

Black bean wrap at Pony Express I liked it because I saw potential in it, but it lacks seasoning and overall ingredient balance (much like the other menu items we have tried here). If they would just season the beans, add a little more cheese, and swap out or complement the cheap tomato salsa they use with their white ranch-y sauce and some corn salsa (a-la-Chipotle), this could be amazing. I added guac on the side for a dollar but, being underseasoned, it did not add much. The boyfriend and I were underwhelmed with this, the black bean quesadilla, the charro burger (bland sauce), sweet potato fries, and the pulled pork sandwich (bland sauce, tasted microwaved, greasy). Most of our qualms could have been resolved with a little salt, pepper, and an extra slice of cheese (my boyfriend found the meager slice was lost in the pulled pork and he could not taste it). Also: why is there no honeybutter for the sweet potato fries?! If they were salted and served with a side of honeybutter, the SPF would be elevated from underwhelming to tasty… Pony Express has an interesting and broad menu, a great philosophy on ingredient sourcing, and an awesome location with outdoor seating (attn: dog owners).
